  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten, nut, sulphite

Ingredients

  • 20 g Raisins
  • 15 g Currants, dried
  • 10 g Apricots, dried
  • 8 g Candied fruit
  • 15 g Butter, unsalted
  • 15 g Sugar, brown
  • 20 g Eggs, whole, raw
  • 20 g Flour, all-purpose
  • 8 g Spirits
  • 0.5 g Pumpkin pie spice
  • 15 g Almond paste
  • 12 g Sugar, powdered
  • 5 g Egg whites, raw

Method

  1. Makes 1 slice; multiply by 20 for a whole cake. Soak the raisins, currants, dried apricots and candied fruit in the spirits overnight, stirring occasionally.
  2. Cream the butter and brown sugar until light and fluffy, beat in the egg, then fold in the flour and mixed spice.
  3. Stir in the soaked fruit with any remaining liquid, then spoon into a lined tin and level the top.
  4. Bake at 140 °C (285 °F) for about 2.5-3 hours until a skewer comes out clean, covering loosely with foil if it browns too quickly.
  5. Once completely cool, brush the top with a little extra spirits, then cover with a thin layer of the almond paste.
  6. Whisk the egg white with the powdered sugar to a smooth, spreadable icing, spread over the marzipan, and leave to set before slicing.
