Ingredients

  • 110 g Cream, heavy
  • 15 g Milk, whole

Method

  1. Pour the cream and milk into a wide, shallow ovenproof dish so the cream is no more than 5 cm deep.
  2. Bake uncovered at a very low 80°C (175°F) for 8 hours, until a thick, golden crust has formed on top and the cream underneath has thickened.
  3. Remove from the oven, cool to room temperature, then cover and refrigerate for at least 8 hours or overnight.
  4. Skim off the thick, crinkled crust and the dense cream just beneath it with a slotted spoon; this is the clotted cream.
  5. Serve chilled, spooned over scones or fruit; keep refrigerated and use within 3 days.
