Clootie Dumpling
One serving has 469 kcal and 7 g protein, and at least a fifth of a woman's daily need of thiamin (43%), manganese (38%), selenium (33%), riboflavin (27%), copper (26%) and niacin (25%). Ready in 60 minutes.

- Preparation: 30 min
- Cooking: 30 min
- Makes: 1 serving (131 g)
- Difficulty: Medium
- Contains: beef, dairy, gluten
Ingredients
- 35 g Flour, all-purpose
- 12 g Beef suet
- 15 g Breadcrumbs, dry
- 15 g Sugar, brown
- 20 g Raisins
- 10 g Currants, dried
- 0.5 g Pumpkin pie spice
- 0.5 g Baking soda
- 15 g Milk, whole
- 8 g Molasses
Method
- Makes 1 portion; multiply every amount by 8 for a whole dumpling that serves 8.
- Mix the flour, grated suet, breadcrumbs, brown sugar, raisins, currants, mixed spice and baking soda together in a bowl.
- Stir in the milk and molasses to make a soft, fairly stiff batter that drops heavily from a spoon.
- Spoon the mixture into the centre of a large, wetted and floured pudding cloth (or a buttered pudding basin covered with foil), and tie or cover securely, leaving room for it to expand.
- Lower into a large pot of simmering water (or set the basin on a trivet in the pot), cover, and steam for about 3 hours, topping up the water as needed so it never boils dry.
- Lift out and unwrap; the outside should look dark and slightly crackled. Slice and serve warm, traditionally with a dusting of sugar.
