  • Cooking: 45 min
  • Makes: 1 serving (285 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: beef, celery, egg, gluten, pork

Ingredients

  • 60 g Flour, all-purpose
  • 20 g Lard
  • 25 g Water
  • 130 g Beef, ground, 85% lean, raw
  • 25 g Onions, raw
  • 15 g Beef broth
  • 1 g Salt
  • 0.5 g Black pepper
  • 0.3 g Nutmeg
  • 8 g Eggs, whole, raw

Method

  1. Melt the lard in the water over low heat, bring just to the boil, then tip into the flour and half the salt and mix quickly into a smooth, warm dough. Cover and rest 15 minutes.
  2. Mix the minced beef with the finely chopped onion, beef broth, the rest of the salt, pepper and nutmeg.
  3. While the dough is still warm, mould two-thirds of it around a jar or pie mould to line the base and sides of a small straight-sided tin, leaving a lip at the top.
  4. Pack the meat mixture into the lined pastry. Roll the rest of the dough into a lid, press the edges together, crimp well and cut a small steam hole in the centre.
  5. Brush the top with beaten egg and bake at 190°C (375°F) for 45 minutes until deep golden and the filling reaches 74°C (165°F) inside.
  6. Rest for 10 minutes before easing out of the tin.
