Summer Pudding
One serving has 249 kcal and 6 g protein, and at least a fifth of a woman's daily need of vitamin C (94%), manganese (53%), thiamin (26%), selenium (22%), niacin (21%) and fiber (20%). Ready in 305 minutes.

- Preparation: 300 min
- Cooking: 5 min
- Makes: 1 serving (185 g)
- Difficulty: Easy
- Diets: Vegan, Dairy-free
- Contains: gluten
Ingredients
- 50 g Bread, white
- 40 g Raspberries, raw
- 30 g Blackberries, raw
- 20 g Currants, black or red, raw
- 30 g Strawberries, raw
- 15 g Sugar
Method
- Makes 1 slice; multiply by 6 for a whole pudding. Remove the crusts from the bread and line a small bowl with the slices, overlapping slightly to cover it completely.
- Gently heat the berries with the sugar for 4-5 minutes, just until the juices run and the sugar dissolves; cool slightly.
- Spoon the fruit and most of its juice into the bread-lined bowl, reserving a little juice, and cover with more bread to seal.
- Press a plate and a weight on top and chill for at least 4 hours, or overnight, so the juices soak through the bread.
- Turn out onto a plate, spoon over the reserved juice to color any pale patches, and serve chilled.
