  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 25 g Phyllo dough
  • 12 g Butter, unsalted
  • 100 g Milk, whole
  • 12 g Semolina
  • 25 g Sugar
  • 20 g Eggs, whole, raw
  • 1 g Vanilla extract
  • 20 g Water
  • 2 g Lemon juice

Method

  1. Makes 1 portion; multiply the ingredients by 8 for a full tray. Heat the milk with half the sugar until steaming, then rain in the semolina, whisking constantly, and cook for 3-4 minutes until thickened.
  2. Off the heat, beat in the egg and vanilla until smooth; cool slightly.
  3. Layer half the phyllo sheets in a small buttered dish, brushing each sheet with melted butter.
  4. Spread the semolina custard over the phyllo, then top with the remaining phyllo sheets, again brushing each with butter.
  5. Bake at 180 °C (355 °F) for 30-35 minutes until the top is golden and crisp.
  6. Meanwhile simmer the water with the remaining sugar and the lemon juice for 4-5 minutes to make a light syrup.
  7. Pour the hot syrup evenly over the pastry as soon as it comes out of the oven.
  8. Let cool and soak for at least 1 hour before cutting a portion to serve.
