  • Preparation: 25 min
  • Cooking: 70 min
  • Makes: 1 serving (495 g)
  • Difficulty: Hard
  • Contains: beef, dairy, gluten

Ingredients

  • 200 g Eggplant, raw
  • 100 g Beef, ground, 80% lean, raw
  • 30 g Onions, raw
  • 3 g Garlic, raw
  • 60 g Tomatoes, canned, crushed
  • 15 g Olive oil
  • 8 g Butter, unsalted
  • 8 g Flour, all-purpose
  • 60 g Milk, whole
  • 10 g Parmesan cheese
  • 0.5 g Salt
  • 0.2 g Black pepper
  • 0.3 g Oregano, dried

Method

  1. Halve the eggplant lengthwise, score the flesh, brush with half the olive oil, and roast at 200 °C (400 °F) for 20 minutes until soft; scoop out some of the flesh to make room for the filling, keeping the shells intact.
  2. Chop the scooped-out flesh and cook the onion and garlic in the remaining olive oil for 4-5 minutes, then add the ground beef and cook until browned with no pink remaining.
  3. Stir in the crushed tomatoes, chopped eggplant flesh, oregano, salt and pepper, and simmer for 15 minutes.
  4. Make a light béchamel: melt the butter, whisk in the flour, cook for 1 minute, then gradually whisk in the milk and simmer for 3-4 minutes until thick.
  5. Spoon the meat sauce into the eggplant shells.
  6. Top each with the béchamel and scatter with the parmesan.
  7. Bake at 190 °C (375 °F) for 15-20 minutes until golden on top.
  8. Rest for 5 minutes before serving.
