  • Difficulty: Easy

Ingredients

  • 30 g Cherries, sour
  • 25 g Sugar
  • 2 g Lemon juice
  • 10 g Water

Method

  1. Pit the cherries. Makes about 15 servings; multiply all the ingredients by 15 for a full jar (roughly 450 ml).
  2. Layer the pitted cherries and sugar in a heavy pot and let stand for 30 minutes so the sugar draws out the juices.
  3. Add the water and bring to a boil over medium heat, skimming off any foam.
  4. Stir in the lemon juice and simmer gently for 20-25 minutes, without breaking up the cherries, until the syrup thickens slightly and coats a spoon.
  5. Ladle into a clean, hot sterilized jar while still hot, seal, and let cool completely; refrigerate once opened and use within a few weeks.
  6. Serve chilled, a spoonful at a time, over yogurt or ice cream, or simply with a glass of cold water.
