  • Difficulty: Easy

  • Contains: dairy, egg, gluten

Ingredients

  • 200 g Potatoes, russet, raw
  • 40 g Flour, all-purpose
  • 60 g Buttermilk
  • 25 g Eggs, whole, raw
  • 2 g Baking soda
  • 1 g Salt
  • 10 g Butter, unsalted

Method

  1. Peel and boil half the potato until tender, about 15 minutes, then drain and mash while hot.
  2. Peel and finely grate the remaining raw potato, then squeeze it hard in a clean towel to remove as much liquid as possible.
  3. Mix the mashed and grated potato with the flour, baking soda and salt.
  4. Beat in the buttermilk and egg to make a thick, dropping batter.
  5. Melt the butter on a griddle or heavy frying pan over medium heat. Spoon in the batter and cook the pancakes for 3-4 minutes per side until golden brown and cooked through.
  6. Serve hot with butter, traditionally alongside a fried breakfast.
