  • Makes: 1 serving (238 g)
  • Difficulty: Medium
  • Diets: High protein, Low carb
  • Contains: dairy, gluten, pork

Ingredients

  • 180 g Pork feet, raw
  • 30 g Onions, raw
  • 0.5 g Bay leaves
  • 1 g Black pepper
  • 1.5 g Salt
  • 10 g Butter, unsalted
  • 15 g Breadcrumbs, dry

Method

  1. Buy 2-3 whole bone-in pig's feet (trotters), split lengthways by the butcher; the bone means their edible meat and skin comes to well under their raw bought weight. Place them in a large pot with the onion, bay leaf, peppercorns and salt, and cover generously with cold water.
  2. Bring to a boil, then reduce to a gentle simmer, cover, and cook for about 2.5-3 hours until the meat is very tender and pulls easily from the bone.
  3. Lift the feet out to drain and cool slightly; discard the poaching liquid.
  4. Brush the still-warm feet with the melted butter and pat the breadcrumbs on all over.
  5. Grill or broil for 8-10 minutes, turning once, until the skin is crisp and golden brown.
  6. Serve hot, traditionally eaten with the fingers.
