Dublin Coddle
One serving has 531 kcal and 30 g protein, and at least a fifth of a woman's daily need of niacin (80%), pyridoxine (75%), selenium (66%), vitamin C (66%), thiamin (62%) and vitamin K (60%). Ready in 105 minutes.

- Preparation: 15 min
- Cooking: 90 min
- Makes: 1 serving (528 g)
- Difficulty: Easy
- Diets: Dairy-free, High protein
- Contains: celery, gluten, pork, poultry
Ingredients
- 100 g Pork sausages, fresh
- 45 g Back bacon
- 200 g Potatoes, raw
- 80 g Onions, raw
- 100 g Chicken broth
- 0.3 g Black pepper
- 3 g Parsley, fresh
Method
- Cut the bacon into large pieces and the sausages into thirds.
- Layer the bacon, sausages, sliced potatoes and onion in a heavy pot, seasoning lightly with pepper between the layers (the bacon and sausages already season the dish with salt).
- Pour in the chicken broth so it just covers the vegetables.
- Bring to a gentle simmer, cover, and cook on low heat for 1-1.5 hours until the potatoes are tender and the sausages are cooked through (74 °C/165 °F), stirring as little as possible so the layers hold together.
- Taste and adjust the seasoning.
- Scatter with parsley and serve hot in bowls with crusty bread.
