Irish Stew
One serving has 661 kcal and 38 g protein, and at least a fifth of a woman's daily need of cobalamin (188%), vitamin A (100%), zinc (81%), pyridoxine (81%), niacin (74%) and vitamin K (71%). Ready in 140 minutes.

- Preparation: 20 min
- Cooking: 120 min
- Makes: 1 serving (715 g)
- Difficulty: Easy
- Diets: Dairy-free, High protein
- Contains: gluten, meat
Ingredients
- 180 g Lamb neck, raw
- 10 g Flour, all-purpose
- 200 g Potatoes, russet, raw
- 80 g Carrots, raw
- 40 g Onions, raw
- 200 g Water
- 3 g Parsley, fresh
- 1.5 g Salt
- 0.3 g Black pepper
Method
- If using bone-in neck chops as is traditional, buy a bit more than this to allow for the bone; trim off excess fat, cut the meat into chunks, and toss lightly in the flour.
- Brown the lamb in a heavy pot over medium-high heat for a few minutes, then add the onion and cook for 3-4 minutes more.
- Pour in the water and bring to a simmer, skimming off any foam. Cover and cook gently for about 1 hour.
- Add the potatoes and carrots and continue simmering, covered, for 45-60 minutes more, until the lamb is tender and the potatoes are starting to break down and thicken the broth.
- Season with salt and pepper, scatter with parsley, and serve hot in bowls.
