  • Cooking: 25 min
  • Makes: 1 serving (216 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: beef, dairy, egg, gluten, pork

Ingredients

  • 100 g Pasta, fresh egg
  • 50 g Beef, ground, 85% lean, raw
  • 30 g Pork, ground, raw
  • 10 g Parmesan cheese
  • 10 g Eggs, whole, raw
  • 0.2 g Nutmeg
  • 0.5 g Salt
  • 0.2 g Black pepper
  • 15 g Butter, unsalted
  • 0.3 g Sage, dried

Method

  1. Brown the beef and pork together in a pan over medium heat until fully cooked through with no pink remaining, about 8-10 minutes, breaking up any lumps; let cool slightly.
  2. Finely chop or process the cooked meat, then mix with the parmesan, egg, nutmeg, salt and pepper to make a firm, well-seasoned filling.
  3. Cut the fresh pasta sheet into small squares, about 4 cm across. Place a small teaspoon of filling in the center of each and fold into a triangle or roll, pinching the edges firmly to seal.
  4. Bring a large pot of salted water to a boil and cook the agnolotti for 3-4 minutes, until they float to the surface and the pasta is tender.
  5. Meanwhile melt the butter in a small pan with the sage over low heat until fragrant.
  6. Drain the agnolotti, toss gently in the sage butter, and serve hot.
