Bistecca alla Fiorentina
One serving has 694 kcal and 47 g protein, and at least a fifth of a woman's daily need of cobalamin (185%), zinc (152%), selenium (109%), niacin (84%), pyridoxine (79%) and riboflavin (56%). Ready in 20 minutes.

- Preparation: 10 min
- Cooking: 10 min
- Makes: 1 serving (264 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, High protein, Low carb
- Contains: beef
Ingredients
- 250 g Beef ribeye, raw
- 10 g Olive oil
- 2 g Salt
- 0.5 g Black pepper
- 1 g Rosemary, fresh
Method
- Bring the steak to room temperature and pat it dry. This dish is traditionally cut from a huge bone-in T-bone; a thick boneless rib or sirloin steak of the same weight is the closest a home cook can do without a bone-in cut.
- Season generously with the coarse salt just before cooking.
- Grill over very hot charcoal, or in a very hot heavy pan, for about 3-4 minutes per side, turning once, until well charred outside and rare to medium-rare in the center (about 50-55 °C/122-131 °F); cook a little longer if you prefer it more done.
- Let rest for 5 minutes.
- Brush with the olive oil, season with the black pepper, and finish with the rosemary leaves before serving whole or sliced.
