Ingredients
- 90 g Pasta, dry
- 60 g Pecorino Romano cheese
- 2 g Black pepper
- 60 g Water
Method
- Toast the cracked black pepper in a dry pan for about 1 minute until fragrant; set aside.
- Cook the pasta in a pot with less salted water than usual, so it becomes extra starchy, until al dente, about 10-11 minutes.
- Reserve a cup of the starchy pasta water, then drain the pasta.
- In a bowl, mix the grated pecorino with a splash of the hot pasta water to form a smooth, loose cream.
- Off the heat, toss the hot pasta with the toasted pepper and the pecorino cream, adding more pasta water gradually until it coats the pasta in a smooth, glossy sauce.
- Serve immediately with extra pecorino and pepper on top.
