  • Cooking: 180 min
  • Makes: 1 serving (634 g)
  • Difficulty: Hard
  • Diets: Gluten-free, Dairy-free
  • Contains: alcohol, beef, celery, sulphite

Ingredients

  • 160 g Beef short ribs, raw
  • 60 g Celery, raw
  • 40 g Carrots, raw
  • 40 g Onions, raw
  • 150 g Tomatoes, canned, crushed
  • 10 g Tomato paste
  • 40 g Wine, red
  • 100 g Beef broth
  • 20 g Olive oil
  • 0.2 g Cloves
  • 0.2 g Cinnamon
  • 2 g Cocoa powder
  • 5 g Pine nuts
  • 5 g Raisins
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Ask your butcher for about 500 g of bone-in oxtail or short ribs, cut into pieces — the bone means the edible meat comes to well under that raw weight.
  2. Brown the meat pieces well on all sides in the olive oil in a heavy pot, then remove.
  3. Soften the celery, carrot and onion in the same pot for about 8 minutes.
  4. Return the meat, add the tomato paste, wine, cloves and cinnamon, and let the wine bubble for a minute.
  5. Add the crushed tomato and beef broth, season with the salt and pepper, and bring to a simmer.
  6. Cover and cook on low heat for 2.5-3 hours, turning occasionally, until the meat is falling-off-the-bone tender.
  7. Stir in the cocoa powder, pine nuts and raisins for the final 10 minutes of cooking.
  8. Remove any loose bones, adjust the seasoning, and serve hot.
