  • Makes: 1 serving (108 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free, Low carb
  • Contains: celery

Ingredients

  • 25 g Cauliflower, raw
  • 20 g Carrots, raw
  • 15 g Bell pepper, red, raw
  • 15 g Celery, raw
  • 20 g Vinegar, white
  • 10 g Olive oil
  • 0.2 g Oregano, dried
  • 0.8 g Salt
  • 2 g Sugar

Method

  1. This is a quick-pickle version ready in a day; for fuller flavor giardiniera is often left longer, and any batch size works the same way — just keep the vegetables fully submerged in fresh brine at these proportions.
  2. Cut the cauliflower into small florets and the carrot, pepper and celery into similarly bite-sized pieces.
  3. Blanch briefly in boiling water for 2-3 minutes, then drain and cool completely.
  4. Bring the vinegar, salt and sugar to a boil to dissolve, then let cool.
  5. Pack the vegetables into a clean jar with the oregano and pour over the cooled brine, making a little extra at the same ratio if needed to submerge them fully.
  6. Seal and refrigerate for at least 24 hours, and up to 1-2 weeks, before serving.
  7. Drain a portion and toss with the olive oil to serve as a tangy side or antipasto.
