One serving has 595 kcal and 20 g protein, and at least a fifth of a woman's daily need of selenium (56%), thiamin (49%), cobalamin (49%), vitamin K (45%), riboflavin (37%) and niacin (36%). Ready in 45 minutes.

- Preparation: 30 min
- Cooking: 15 min
- Makes: 1 serving (202 g)
- Difficulty: Hard
- Contains: beef, dairy, egg, gluten, pork
Ingredients
- 60 g Olives, green
- 30 g Beef, ground, 85% lean, raw
- 20 g Pork, ground, raw
- 6 g Parmesan cheese
- 15 g Flour, all-purpose
- 25 g Eggs, whole, raw
- 25 g Breadcrumbs, dry
- 20 g Vegetable oil
- 0.1 g Nutmeg
- 0.3 g Salt
- 0.2 g Black pepper
Method
- Brown the beef and pork together until fully cooked with no pink remaining, about 8 minutes, breaking up any lumps; let cool.
- Finely chop or process the cooked meat with the parmesan, nutmeg, salt and pepper into a smooth, well-seasoned paste.
- Pit the olives if needed, cutting each into a spiral so it opens up like a small shell.
- Wrap and press a little of the meat filling around each olive, reshaping it back into a round.
- Dredge in the flour, dip in the beaten egg, then coat in the breadcrumbs.
- Heat the oil and fry the olives in batches for 3-4 minutes until deep golden. Drain and serve hot.
