  • Makes: 1 serving (533 g)
  • Difficulty: Hard
  • Diets: High protein, Low carb
  • Contains: alcohol, beef, celery, dairy, gluten, sulphite

Ingredients

  • 180 g Veal shank, raw
  • 10 g Flour, all-purpose
  • 15 g Butter, unsalted
  • 10 g Olive oil
  • 40 g Onions, raw
  • 30 g Carrots, raw
  • 30 g Celery, raw
  • 50 g Wine, white
  • 10 g Tomato paste
  • 150 g Beef broth
  • 0.3 g Bay leaves
  • 3 g Parsley, fresh
  • 1 g Lemon zest
  • 2 g Garlic, raw
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Ask your butcher for one cross-cut veal shank piece, about 300-350 g bone-in, tied around the middle to hold its shape; the bone means the edible meat comes to well under that raw weight.
  2. Season the shank and dredge in the flour.
  3. Brown well on both sides in the butter and olive oil in a heavy pot, then remove.
  4. Soften the onion, carrot and celery in the same pot for about 8 minutes.
  5. Return the shank, add the wine and let it bubble for a minute, then stir in the tomato paste, broth and bay leaf.
  6. Cover and braise on low heat for 1.5-2 hours, turning once, until the meat is very tender and almost falling from the bone.
  7. Meanwhile mix the parsley, lemon zest and garlic into a gremolata.
  8. Serve the shank with its sauce, scattered with the gremolata, traditionally alongside risotto.
