  • Preparation: 360 min
  • Cooking: 35 min
  • Makes: 1 serving (89 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 35 g Flour, all-purpose
  • 10 g Sugar
  • 15 g Butter, unsalted
  • 15 g Eggs, whole, raw
  • 4 g Egg yolks, raw
  • 1 g Yeast, active dry
  • 0.5 g Vanilla extract
  • 0.5 g Lemon zest
  • 5 g Milk, whole
  • 3 g Sugar, powdered

Method

  1. Makes one pandoro, about 10 slices; multiply all the ingredients by 10 for a whole cake.
  2. Warm the milk and dissolve the yeast with a pinch of the sugar; leave for about 10 minutes until foamy.
  3. Mix the flour, remaining sugar, zest and vanilla. Add the yeast mixture, egg and egg yolk, and knead in the softened butter gradually for 15-20 minutes into a very smooth, elastic, glossy dough.
  4. Cover and let rise in a warm place for 3-4 hours until doubled.
  5. Knock back gently and shape into a ball. Place in a star-shaped pandoro mold (or a tall round tin) and let rise again for 1.5-2 hours until it reaches the top of the mold.
  6. Bake at 170 °C (340 °F) for 30-35 minutes until deep golden and a skewer comes out clean, covering loosely with foil if it browns too fast.
  7. Cool completely, ideally upside down, then dust generously with the powdered sugar before serving.
