  • Preparation: 360 min
  • Cooking: 50 min
  • Makes: 1 serving (86.8 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 33 g Flour, all-purpose
  • 8 g Sugar
  • 12.5 g Butter, unsalted
  • 8 g Eggs, whole, raw
  • 5 g Egg yolks, raw
  • 0.8 g Yeast, active dry
  • 5 g Milk, whole
  • 6.7 g Raisins
  • 6.7 g Candied fruit
  • 0.7 g Lemon zest
  • 0.4 g Vanilla extract

Method

  1. Makes one panettone, about 12 slices; multiply all the ingredients by 12 for a whole cake.
  2. Warm the milk and dissolve the yeast with a pinch of the sugar; leave for about 10 minutes until foamy.
  3. Mix the flour, remaining sugar and zest. Add the yeast mixture, egg, egg yolk and vanilla, then knead in the softened butter gradually for 15-20 minutes into a smooth, elastic dough.
  4. Fold in the raisins and candied fruit.
  5. Cover and let rise in a warm place for 3-4 hours until doubled.
  6. Shape into a ball and place in a panettone paper mold. Let rise again for 2-3 hours until it nearly reaches the top.
  7. Bake at 170 °C (340 °F) for 45-50 minutes until deep golden and a skewer comes out clean, covering loosely with foil if it browns too fast.
  8. If you can, pierce the base with long skewers and hang it upside down to cool completely so it doesn't collapse; otherwise cool upright on a rack.
