  • Cooking: 20 min
  • Makes: 1 serving (332 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: dairy, gluten, pork

Ingredients

  • 100 g Pasta, dry
  • 60 g Bacon, raw
  • 150 g Tomatoes, canned, crushed
  • 20 g Pecorino Romano cheese
  • 1 g Chilies, dried red
  • 0.5 g Black pepper
  • 0.5 g Salt

Method

  1. Cut the guanciale (bacon is used here as a stand-in) into short strips and render it slowly in a cold pan over low heat until crisp and golden, about 8 minutes; lift out most pieces, leaving the fat behind.
  2. Crumble the dried chili into the fat, add the crushed tomatoes and a pinch of salt, and simmer 15 minutes until the sauce has thickened and darkened slightly.
  3. Meanwhile, cook the pasta in a large pot of boiling water until al dente, then drain, keeping a cup of the cooking water.
  4. Toss the pasta into the tomato sauce with a splash of the pasta water, then stir most of the crisp guanciale back in.
  5. Divide onto a plate, scatter with the remaining guanciale and the pecorino, and finish with a grind of black pepper.
