Pasta alla Gricia
One serving has 765 kcal and 32 g protein, and at least a fifth of a woman's daily need of selenium (148%), thiamin (100%), phosphorus (76%), niacin (72%), folate (60%) and manganese (59%). Ready in 25 minutes.

- Preparation: 10 min
- Cooking: 15 min
- Makes: 1 serving (202 g)
- Difficulty: Medium
- Diets: High protein
- Contains: dairy, gluten, pork
Ingredients
- 100 g Pasta, dry
- 70 g Bacon, raw
- 30 g Pecorino Romano cheese
- 1 g Black pepper
- 0.5 g Salt
Method
- Cut the guanciale (bacon stands in here) into small strips and cook it in a cold, dry pan over low heat until the fat runs and the pieces turn crisp and golden, about 8 minutes.
- Bring a pot of water to the boil, add a small pinch of the salt, and cook the pasta until al dente.
- Just before draining, scoop out a mugful of the starchy pasta water and set it aside.
- Add the drained pasta to the pan with the guanciale and its fat, off the heat, then add a generous grind of black pepper and a splash of the pasta water.
- Toss in the grated pecorino away from direct heat, adding more pasta water a little at a time, until the sauce turns glossy and coats the pasta; serve at once.
