  • Makes: 1 serving (292 g)
  • Difficulty: Medium
  • Diets: High protein, Low carb
  • Contains: alcohol, beef, celery, dairy, gluten, poultry, sulphite

Ingredients

  • 150 g Veal cutlets, raw
  • 15 g Flour, all-purpose
  • 15 g Butter, unsalted
  • 10 g Olive oil
  • 20 g Lemon juice
  • 8 g Capers
  • 30 g Wine, white
  • 40 g Chicken broth
  • 3 g Parsley, fresh
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Pat the veal cutlets dry, season lightly with salt and pepper, then dust both sides with the flour, shaking off the excess.
  2. Heat the olive oil and half the butter in a pan over medium-high heat and fry the cutlets 1-2 minutes a side until golden and just cooked through; set aside on a warm plate.
  3. Pour the white wine into the same pan to deglaze, scraping up any browned bits, and let it bubble down by half, about 2 minutes.
  4. Add the chicken broth, lemon juice and capers and simmer 3 minutes until slightly reduced.
  5. Whisk in the remaining butter off the heat until the sauce turns glossy, then return the veal to the pan just to coat and warm through.
  6. Scatter with chopped parsley and serve at once with the pan sauce spooned over.
