  • Makes: 1 serving (561 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, High protein
  • Contains: alcohol, poultry, sulphite

Ingredients

  • 200 g Chicken thighs, skin-on, raw
  • 60 g Onions, raw
  • 60 g Bell pepper, red, raw
  • 60 g Mushrooms, cremini, raw
  • 120 g Tomatoes, canned, diced
  • 6 g Garlic, raw
  • 12 g Olive oil
  • 40 g Wine, red
  • 1 g Thyme, dried
  • 0.3 g Bay leaves
  • 1.5 g Salt
  • 0.3 g Black pepper

Method

  1. Season the chicken thigh pieces with salt and pepper, then brown them well in the olive oil over medium-high heat, about 4 minutes a side; set aside.
  2. Add the onion and pepper to the same pan and cook 5 minutes until softened, then add the garlic and mushrooms and cook a further 3 minutes.
  3. Pour in the red wine and let it bubble for 1-2 minutes to cook off the raw alcohol smell.
  4. Stir in the diced tomatoes, thyme and bay leaf, then return the chicken to the pan, cover, and simmer over low heat for 35-40 minutes, until the chicken is tender and cooked through with no pink remaining and juices run clear (internal temperature at least 74 °C/165 °F).
  5. Uncover for the last 5 minutes to thicken the sauce slightly. Remove the bay leaf before serving.
