Ricciarelli
One serving has 283 kcal and 8 g protein, and at least a fifth of a woman's daily need of vitamin E (48%), copper (34%), manganese (31%), magnesium (26%), riboflavin (25%) and phosphorus (21%). Ready in 35 minutes.

- Preparation: 20 min
- Cooking: 15 min
- Makes: 1 serving (68.3 g)
- Difficulty: Easy
- Diets: Vegetarian, Gluten-free, Dairy-free
- Contains: alcohol, egg, honey, nut
Ingredients
- 30 g Almond flour
- 23 g Sugar, powdered
- 12 g Egg whites, raw
- 3 g Honey
- 0.3 g Vanilla extract
Method
- Makes 1 portion of 2 cookies; multiply every amount by about 10 for a full batch of 20.
- Whip the egg white until frothy but not stiff, then work in the almond flour, most of the powdered sugar, the honey and vanilla to form a soft, slightly sticky paste.
- Chill the paste for 30 minutes so it firms up enough to shape.
- Shape into small diamond or oval biscuits and roll each one in the remaining powdered sugar to coat generously.
- Set on a lined tray and bake at 150 °C (300 °F) for 15-18 minutes until the surface cracks slightly but the centre stays pale and chewy.
- Cool completely on the tray; ricciarelli firm up as they cool and keep well for several days.
