  • Makes: 1 serving (249 g)
  • Difficulty: Medium
  • Diets: High protein, Low carb
  • Contains: alcohol, beef, dairy, gluten, pork, sulphite

Ingredients

  • 150 g Veal cutlets, raw
  • 30 g Ham, dry-cured
  • 0.4 g Sage, dried
  • 20 g Butter, unsalted
  • 8 g Flour, all-purpose
  • 40 g Wine, white
  • 0.5 g Salt
  • 0.2 g Black pepper

Method

  1. Lay the veal cutlets flat, season lightly with pepper (the prosciutto brings plenty of salt), and lay a slice of prosciutto over each, pressing on a pinch of dried sage (fresh sage leaves are traditional) to hold it in place; secure with a toothpick if needed.
  2. Dust the prosciutto side lightly with flour.
  3. Melt half the butter in a pan over medium-high heat and fry the cutlets, prosciutto-side down first, for about 90 seconds a side, until the veal is just cooked through and the prosciutto is lightly crisp.
  4. Lift the cutlets out onto a warm plate, then pour the white wine into the pan and let it bubble, scraping up the browned bits, for 1-2 minutes.
  5. Swirl in the remaining butter to make a glossy sauce, then spoon it over the cutlets and serve immediately.
