  • Preparation: 30 min
  • Cooking: 20 min
  • Makes: 1 serving (154 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 40 g Phyllo dough
  • 20 g Butter, unsalted
  • 50 g Ricotta
  • 10 g Semolina
  • 15 g Sugar
  • 10 g Eggs, whole, raw
  • 5 g Candied fruit
  • 0.3 g Cinnamon
  • 0.3 g Vanilla extract
  • 3 g Sugar, powdered

Method

  1. Makes 1 pastry; multiply every amount for as many as you need.
  2. Brush each sheet of phyllo dough (used here as a stand-in for the hand-stretched sfogliatella dough) with melted butter and stack several layers, then roll up tightly into a log; chill 20 minutes.
  3. Cook the semolina in a little water until thick, then cool and beat it with the ricotta, sugar, egg, candied fruit and cinnamon to make the filling.
  4. Slice the chilled log into rounds, and press and stretch each round into a cone-shaped shell, working from the centre outward so the layers fan out like a shell.
  5. Spoon the filling into each shell and fold the wide edge over to seal.
  6. Bake at 200 °C (400 °F) for 20-25 minutes until deep golden and the layers have separated and crisped.
  7. Dust with powdered sugar once cooled slightly and serve while still a little warm.
