Stracciatella Soup
One serving has 143 kcal and 13 g protein, and at least a fifth of a woman's daily need of vitamin K (55%), choline (42%), selenium (39%), riboflavin (37%), phosphorus (30%) and cobalamin (30%). Ready in 15 minutes.

- Preparation: 5 min
- Cooking: 10 min
- Makes: 1 serving (425 g)
- Difficulty: Easy
- Diets: Gluten-free, Low carb
- Contains: celery, dairy, egg, poultry
Ingredients
- 150 g Chicken broth
- 200 g Water
- 60 g Eggs, whole, raw
- 12 g Parmesan cheese
- 0.1 g Nutmeg
- 3 g Parsley, fresh
- 0.2 g Salt
Method
- Bring the chicken broth and water to a gentle boil together in a small pot.
- In a bowl, whisk the eggs with the parmesan and a small pinch of nutmeg until well combined.
- Season the simmering broth with the salt, then pour the egg mixture in slowly while stirring the broth in one direction with a fork, so it sets into fine shreds ('stracci') rather than a solid clump.
- Cook for 1 minute more, just until the egg is fully set and no longer runny.
- Ladle into a bowl and scatter with the chopped parsley before serving hot.
