  • Preparation: 30 min
  • Cooking: 15 min
  • Makes: 1 serving (170 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 20 g Flour, all-purpose
  • 8 g Butter, unsalted
  • 30 g Water
  • 20 g Eggs, whole, raw
  • 20 g Sugar
  • 40 g Milk, whole
  • 10 g Egg yolks, raw
  • 4 g Cornstarch
  • 0.2 g Vanilla extract
  • 3 g Sugar, powdered
  • 5 g Cherries, sour
  • 10 g Vegetable oil

Method

  1. Makes 1 pastry; multiply every amount for as many as you need.
  2. Melt the butter in the water, bring to a boil, then tip in the flour all at once and beat hard until it forms a smooth ball that pulls from the pan; cool slightly, then beat in the egg to make a glossy choux dough.
  3. Pipe the dough into a ring about 8 cm across onto parchment paper.
  4. Heat the frying oil to 170 °C (340 °F) and slide the ring in (paper and all, sliding it off once it releases); fry 4-5 minutes, turning, until deeply golden and puffed; drain on paper towel.
  5. For the filling, whisk the milk, egg yolks, sugar and cornstarch together in a pan and cook over medium heat, whisking constantly, until it thickens into a custard, about 4-5 minutes; stir in the vanilla and cool.
  6. Split the fried ring or pipe the custard into the centre, dust generously with powdered sugar, and top with a sour cherry.
