  • Makes: 1 serving (603 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 600 g Buttermilk
  • 1.5 g Salt
  • 1 g Caraway seeds

Method

  1. Warm the buttermilk gently to just below body temperature, then pour it into a clean jar, cover loosely, and leave at room temperature for 2 days to sour and thicken further, until it separates into curds and whey.
  2. Line a colander with muslin or a clean thin cloth, pour in the soured buttermilk, and let it drain for several hours, or overnight in the fridge, until a soft, crumbly curd is left.
  3. Turn the curd into a bowl, season with the salt and caraway seeds, and work it together with a spoon until smooth and spreadable, adding a splash of the reserved whey if it is too stiff.
  4. Press the cheese into a small dish or shape into a flat round, cover, and leave in the fridge for a day so the flavor develops; it can also be left to firm up and dry a little longer, up to a couple of weeks, turning it now and then, for a firmer, more pungent cheese.
  5. Serve thinly spread on dark bread, traditionally with a drizzle of oil and raw onion rings on the side.
