  • Preparation: 15 min
  • Cooking: 45 min
  • Makes: 1 serving (124 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 80 g Fava beans, dried
  • 8 g Garlic, raw
  • 20 g Olive oil
  • 5 g Chili peppers, red, raw
  • 5 g Parsley, fresh
  • 5 g Lemon juice
  • 1 g Salt

Method

  1. Soak the dried broad beans in plenty of cold water overnight.
  2. Drain, cover with fresh water, bring to a boil and boil hard for 10 minutes, then reduce to a simmer and cook for 45-60 minutes until completely soft.
  3. Drain the beans, keeping a little of the cooking water, and mash or blend them with the garlic, chili and half the olive oil until fairly smooth but still with some texture.
  4. Stir in the lemon juice, salt and chopped parsley, loosening with a splash of the reserved cooking water if it seems too thick.
  5. Spoon into a bowl, drizzle with the remaining olive oil, and serve at room temperature with bread or crackers for scooping.
