  • Preparation: 10 min
  • Cooking: 50 min
  • Makes: 1 serving (87.7 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: dairy, gluten, honey

Ingredients

  • 25 g Flour, rye
  • 15 g Flour, all-purpose
  • 15 g Honey
  • 8 g Molasses
  • 1 g Baking soda
  • 0.3 g Cinnamon
  • 0.1 g Cloves
  • 0.3 g Ginger, ground
  • 15 g Milk, whole
  • 8 g Butter, unsalted

Method

  1. Makes 1 slice; multiply by 12 for a whole loaf. Warm the honey and molasses with the milk until runny, then whisk in the baking soda.
  2. Mix the rye flour, flour, cinnamon, cloves and ginger, then stir in the honey mixture to a smooth, thick batter.
  3. Pour into a small lined loaf tin and bake at 160 °C (320 °F) for 45-50 minutes until a skewer comes out clean.
  4. Cool completely in the tin, as the loaf firms up and slices more easily once cold (it also improves after a day).
  5. Slice thinly and serve spread with the butter.
