  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 35 g Puff pastry
  • 60 g Milk, whole
  • 15 g Cream, heavy
  • 20 g Sugar
  • 20 g Egg yolks, raw
  • 3 g Cornstarch
  • 0.1 g Cinnamon
  • 0.3 g Lemon zest

Method

  1. Makes 1 tart; multiply every amount for as many as you need.
  2. Press the puff pastry into a small tart or muffin mould, pushing it thin against the base and sides so it comes up above the rim.
  3. Whisk the cornstarch with a splash of the milk until smooth, then heat the rest of the milk, cream, sugar and cinnamon in a pan until steaming.
  4. Whisk the cornstarch mixture and egg yolks together, then slowly pour in the hot milk while whisking, and return everything to the pan; cook over low heat, stirring, for 2-3 minutes until slightly thickened (it will finish setting in the oven).
  5. Strain the custard and pour it into the pastry case, filling almost to the top.
  6. Bake at 230 °C (450 °F) for 15-18 minutes until the pastry is deep golden and the custard is blistered and browned in spots on top; cool for a few minutes before eating warm.
