  • Preparation: 90 min
  • Cooking: 15 min
  • Makes: 1 serving (152 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 90 g Flour, all-purpose
  • 1.5 g Yeast, active dry
  • 35 g Milk, whole
  • 8 g Butter, unsalted
  • 6 g Sugar
  • 10 g Eggs, whole, raw
  • 1 g Salt

Method

  1. Warm the milk slightly and dissolve the yeast and sugar in it; leave for 10 minutes until foamy.
  2. Mix the flour and salt in a bowl, then stir in the melted butter, egg and yeast mixture, bringing it together into a soft dough.
  3. Knead for 8-10 minutes until smooth and elastic, then place in an oiled bowl, cover, and let rise in a warm place for 1 hour, until doubled.
  4. Shape the dough into a soft, slightly flattened oval roll and place it on a lined tray.
  5. Cover and let rise for a further 30 minutes, until puffy.
  6. Bake at 200°C (400°F) for 15-18 minutes until pale golden (pebetes stay soft and light in colour, not deeply browned).
  7. Cool slightly, then split and fill with your favourite sandwich filling, as is classic in Argentine bakeries.
