Ingredients

  • 60 g Flour, all-purpose
  • 8 g Olive oil
  • 3 g Vinegar, white
  • 20 g Water
  • 60 g Beef, ground, 80% lean, raw
  • 20 g Onions, raw
  • 15 g Eggs, whole, raw
  • 10 g Olives, black
  • 15 g Vegetable oil
  • 0.5 g Salt

Method

  1. Mix the flour and salt in a bowl, then rub in the oil and vinegar, and gradually add the water to form a smooth, firm dough; knead briefly, cover, and rest for 20 minutes.
  2. Meanwhile, cook the ground beef and diced onion in a dry pan over medium heat for 6-7 minutes until browned; season lightly and let cool.
  3. Boil the egg for 9 minutes, cool, peel and chop it, then stir it into the beef with the chopped olives.
  4. Roll the dough out very thinly and cut into two rounds or rectangles.
  5. Spoon the filling onto one half of each piece of dough, fold the other half over, and press and crimp the edges firmly to seal.
  6. Heat the oil for frying to 180°C (350°F) and fry the pastels for 3-4 minutes, turning once, until golden, blistered and crisp.
  7. Drain briefly on paper towels and serve hot.
