  • Makes: 1 serving (388 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: beef, gluten, pork, poultry

Ingredients

  • 50 g Pork belly, raw
  • 40 g Chorizo, fresh (Mexican)
  • 30 g Blood sausage
  • 40 g Chicken thighs, boneless, skinless, raw
  • 70 g Potatoes, raw
  • 60 g Plantains, ripe, raw
  • 25 g Corn flour, white
  • 25 g Water
  • 30 g Avocado, raw
  • 5 g Lime juice
  • 12 g Vegetable oil
  • 1 g Salt

Method

  1. Cut the pork belly into small chunks and fry in a dry pan over medium heat until crisp and golden, rendering out most of the fat (chicharrón).
  2. In the same pan, cook the chorizo (or Colombian-style chorizo, if you can get it) and blood sausage until browned and cooked through, then the chicken thigh until no longer pink inside.
  3. Cube the potato and fry in a little oil until golden and crisp; fry the ripe plantain slices until caramelized.
  4. Mix the corn flour with the water and a pinch of salt to a soft dough, pat into a small disc and cook on a hot griddle with a little oil for 3-4 minutes per side until lightly charred (a small arepa).
  5. Arrange the meats, fried potato, plantain and arepa on a shared plate with the sliced avocado, and serve with lime wedges.
