  • Makes: 1 serving (517 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 500 g Milk, whole
  • 15 g Lime juice
  • 1.5 g Salt

Method

  1. Heat the milk in a heavy pot over medium heat, stirring occasionally, until it is just below boiling (about 85 °C/185 °F).
  2. Stir in the lime juice and reduce the heat; keep stirring gently until the curds separate cleanly from the pale whey, 2-3 minutes.
  3. Remove from the heat and let it sit undisturbed for 10 minutes.
  4. Line a colander with cheesecloth, pour in the curds, and let the whey drain for 20 minutes, then sprinkle the curds with the salt and press them into a disc with a weight on top for at least an hour to firm up.
  5. For the real Turrialba character, wrap the pressed disc and age it in the refrigerator for 2-4 weeks, turning every few days, before slicing; eaten fresh after pressing it is a mild, soft cheese.
