  • Preparation: 20 min
  • Cooking: 30 min
  • Makes: 1 serving (673 g)
  • Difficulty: Hard
  • Contains: beef, dairy, gluten, meat, pork

Ingredients

  • 180 g Potatoes, raw
  • 45 g Blood sausage
  • 50 g Lamb liver, raw
  • 30 g Onions, raw
  • 4 g Garlic, raw
  • 60 g Milk, whole
  • 1 g Cumin
  • 2 g Sazón seasoning
  • 3 g Cilantro, fresh
  • 10 g Scallions, raw
  • 30 g Avocado, raw
  • 8 g Vegetable oil
  • 250 g Water

Method

  1. Sauté the onion, garlic, cumin and sazón (standing in for achiote) in the oil in a large pot until fragrant.
  2. Add the water and diced potato, and simmer for 20-25 minutes until the potato is very tender and starting to fall apart, thickening the soup.
  3. Meanwhile, pan-cook the lamb liver (standing in for the traditional mix of sheep offal) fully until no pink remains, at least 71 °C (160 °F), then dice small.
  4. Cube the blood sausage (a stand-in for the cooked sheep's blood traditionally used) and add it to the soup with the cooked liver and the milk; simmer for 5 more minutes.
  5. Ladle into bowls and top each with diced avocado and sliced scallions; serve with hot ají sauce on the side, tasting before adding salt since the blood sausage is already well seasoned.
