One serving has 736 kcal and 28 g protein, and at least a fifth of a woman's daily need of cobalamin (147%), zinc (71%), selenium (69%), pyridoxine (66%), thiamin (53%) and phosphorus (43%). Ready in 200 minutes.

- Preparation: 20 min
- Cooking: 180 min
- Makes: 1 serving (455 g)
- Difficulty: Hard
- Diets: Gluten-free, Dairy-free
- Contains: beef, pork
Ingredients
- 120 g Beef short ribs, raw
- 60 g Pork shoulder, raw
- 25 g Molasses
- 30 g Onions, raw
- 5 g Garlic, raw
- 5 g Chili peppers, red, raw
- 0.5 g Cinnamon
- 0.2 g Cloves
- 8 g Sugar, brown
- 1.5 g Salt
- 200 g Water
Method
- Brown the beef short ribs (a stand-in for the traditional oxtail) and pork pieces well on all sides in a heavy pot.
- Add the onion and garlic and cook for 2 minutes until fragrant.
- Stir in the molasses (a home stand-in for cassareep, the dark cassava syrup this dish is traditionally built on), cinnamon stick, cloves, whole chili pepper, brown sugar and water.
- Bring to a boil, then reduce the heat, cover, and simmer gently for 2.5-3 hours, stirring occasionally and topping up water as needed, until the meat is fork-tender and reaches at least 74 °C (165 °F), and the sauce is thick and dark.
- Remove the whole chili and cinnamon stick, season with salt, and serve hot; this stew keeps well and is traditionally reheated over several days.
