- Preparation: 20 min
- Cooking: 50 min
- Makes: 1 serving (218 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, gluten
Ingredients
- 70 g Pie crust, unbaked
- 120 g Cherries, sour
- 18 g Sugar
- 4 g Cornstarch
- 3 g Lemon juice
- 3 g Butter, unsalted
Method
- Makes 1 slice (1/8 pie); multiply by 8 for a whole pie. Pit the cherries if needed, and toss them with the sugar, cornstarch and lemon juice.
- Roll out the pastry and line a pie dish with about two-thirds of it, saving the rest for a lattice or lid.
- Spoon the cherry filling into the lined dish and dot with the butter.
- Roll the remaining pastry and cut into strips for a lattice, or use as a full lid with a steam vent cut in the top; seal and crimp the edges.
- Bake at 200 °C (400 °F) for 15 minutes, then lower the oven to 180 °C (350 °F) and bake a further 30-35 minutes until the crust is golden and the filling bubbles.
- Cool for at least 1 hour before slicing, so the filling has time to set.
