Ingredients

  • 70 g Kidney beans, red, dried
  • 120 g Rice, white, long-grain
  • 60 g Kielbasa
  • 50 g Onions, raw
  • 30 g Celery, raw
  • 40 g Bell pepper, green, raw
  • 8 g Garlic, raw
  • 0.3 g Bay leaves
  • 1 g Cayenne pepper
  • 0.5 g Thyme, dried
  • 10 g Vegetable oil
  • 300 g Water

Method

  1. Rinse the kidney beans and soak them in plenty of water for at least 8 hours; drain.
  2. Heat the oil in a heavy pot over medium heat and cook the diced onion, celery, bell pepper and garlic (the 'holy trinity') for 5-6 minutes until softened.
  3. Slice the smoked sausage and add it to the pot, cooking for 2-3 minutes to render some fat.
  4. Add the soaked beans, water, bay leaf, cayenne and thyme, and bring to a boil.
  5. Reduce the heat, cover partially, and simmer for 1.5-2 hours, stirring occasionally and mashing some beans against the side of the pot, until thick and creamy and the beans are very tender; season with the salt.
  6. Meanwhile, rinse the rice and cook it in a separate pan according to the package until fluffy.
  7. Serve the beans ladled over the rice.
