  • Makes: 1 serving (224 g)
  • Difficulty: Hard
  • Diets: Gluten-free, Dairy-free, High protein, Low carb
  • Contains: beef

Ingredients

  • 220 g Beef brisket, raw
  • 1.5 g Salt
  • 2 g Black pepper

Method

  1. Trim the brisket, leaving a layer of fat about 5-6 mm thick to baste the meat as it renders.
  2. Mix the salt and coarse black pepper, the classic Texas 'Dalmatian' rub, and coat the brisket evenly all over.
  3. Set up a smoker for indirect heat at about 110 °C (225 °F) using a mild wood such as oak.
  4. Smoke the brisket fat-side up for 10-12 hours, maintaining a steady temperature and adding wood as needed, until the internal temperature reaches about 95-99 °C (203-210 °F) and a skewer slides in with almost no resistance.
  5. Wrap the brisket in butcher paper or foil and let it rest in a warm cooler for at least 45-60 minutes; this redistributes the juices.
  6. Slice thinly against the grain and serve, with no sauce needed.
