  • Difficulty: Easy
  • Diets: Dairy-free
  • Contains: celery, gluten, pork, poultry, soy

Ingredients

  • 90 g Pork, ground, raw
  • 50 g Glass noodles, dry
  • 10 g Black bean sauce
  • 8 g Garlic, raw
  • 5 g Ginger, fresh
  • 10 g Scallions, raw

  1. Soak the glass noodles in warm water for 10 minutes until pliable, then drain and cut into shorter lengths with scissors.
  2. Heat the oil in a wok over medium-high heat, add the ground pork, and stir-fry for 3-4 minutes, breaking it into small crumbs, until browned.
  3. Add the garlic, ginger and the black bean sauce (doubanjiang) and stir-fry for 30 seconds until fragrant and the oil turns red.
  4. Pour in the chicken broth, soy sauce and sugar, bring to a simmer, then add the drained noodles and toss to coat.
  5. Cook for 3-4 minutes, stirring often, until the noodles have absorbed most of the sauce and look glossy, like ants climbing a tree.
  6. Sprinkle with the black pepper and scallion, and serve hot.
