  • Preparation: 30 min
  • Cooking: 10 min
  • Makes: 1 serving (300 g)
  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten, soy, sulphite

Ingredients

  • 130 g Flour, bread (strong)
  • 60 g Water
  • 2 g Salt
  • 20 g Vegetable oil
  • 5 g Chilies, dried red
  • 8 g Garlic, raw
  • 10 g Scallions, raw
  • 10 g Soy sauce
  • 5 g Vinegar, balsamic
  • 50 g Bok choy, raw

Method

  1. Mix the flour with the water and half the salt into a rough dough, knead for 5 minutes until smooth, rub the surface with a little of the oil, cover, and rest for at least 30 minutes to relax the gluten.
  2. Divide the dough into two portions and roll each into a thick strip, brushing with more oil; rest a further 10 minutes if time allows, for easier stretching.
  3. Holding each strip by both ends, slap and stretch it against the counter until long and wide like a belt, then tear a line down the centre lengthwise, leaving the ends intact, to open it into one long wide noodle.
  4. Boil the noodles in plenty of water for 3-4 minutes, adding the bok choy for the last minute, then drain and pile into a bowl.
  5. Top the noodles with the garlic, chilies, remaining salt and scallion, then heat the remaining oil until just smoking and pour it over the toppings so it sizzles.
  6. Drizzle with the soy sauce and black vinegar, toss everything together, and serve immediately.
