  • Cooking: 35 min
  • Makes: 1 serving (233 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: alcohol, gluten, honey, pork, soy, sulphite

Ingredients

  • 170 g Pork shoulder, raw
  • 15 g Hoisin sauce
  • 8 g Soy sauce
  • 5 g Sugar
  • 12 g Honey
  • 10 g Wine, fortified, dry
  • 6 g Garlic, raw
  • 1 g Anise seed
  • 6 g Ketchup

Method

  1. Cut the pork shoulder into a long, thick strip and pierce it all over with a fork so the marinade can penetrate.
  2. Whisk together the hoisin sauce, soy sauce, sugar, half the honey, the wine, garlic, ground anise seed and ketchup, then rub it all over the pork.
  3. Cover and marinate in the fridge for at least 8 hours, or overnight, turning the meat once or twice.
  4. Heat the oven to 220 °C (425 °F). Lift the pork from the marinade (keep the marinade) and set it on a wire rack over a foil-lined tray.
  5. Roast for 15 minutes, then turn, brush with the reserved marinade, and roast for another 15-20 minutes, basting once more, until a skewer meets little resistance and the surface is caramelized.
  6. Brush the hot pork with the remaining honey, rest for 5 minutes, then slice thinly across the grain and check the middle is no longer pink before serving.
  7. Cook the leftover marinade in a small pan at a rolling boil for 2 full minutes before spooning any of it over the sliced meat, since it touched raw pork.
