  • Preparation: 20 min
  • Cooking: 10 min
  • Makes: 1 serving (101 g)
  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten, sesame

Ingredients

  • 60 g Flour, all-purpose
  • 35 g Water
  • 5 g Sesame oil
  • 0.5 g Salt

Method

  1. Pour the boiling water into the flour and salt, stirring quickly with chopsticks, then knead once cool enough to handle into a smooth dough; cover and rest for 20 minutes.
  2. Divide the dough into small balls, flatten two into discs, brush one with the sesame oil, and stack the other on top.
  3. Roll the stacked pair together into a thin, wide pancake; repeat with the remaining dough.
  4. Cook each stacked pancake in a dry, ungreased pan over medium heat for 1 minute per side until small bubbles appear and light brown spots form.
  5. While still hot, peel the two layers apart into two thin pancakes; stack and cover with a cloth to keep warm and soft. This makes about 4 pancakes (1 portion); multiply the ingredients for more.
