  • Makes: 1 serving (176 g)
  • Difficulty: Easy
  • Diets: Vegan, Dairy-free
  • Contains: gluten, mustard, peanut, soy

Ingredients

  • 90 g Pasta, dry
  • 5 g Chilies, dried red
  • 20 g Vegetable oil
  • 8 g Garlic, raw
  • 10 g Scallions, raw
  • 10 g Soy sauce
  • 15 g Mustard greens, pickled
  • 10 g Peanuts, roasted
  • 5 g Vinegar, white
  • 2 g Sugar
  • 1 g Black pepper

Method

  1. Toast the dried chilies briefly in a dry pan until fragrant but not burnt, then crush coarsely into flakes.
  2. Heat the oil until hot, then pour it over the crushed chilies and minced garlic in a heatproof bowl to make a fragrant chili oil; let it sit for a few minutes.
  3. In a serving bowl, mix the soy sauce, vinegar, sugar and black pepper with a couple of spoonfuls of the chili oil.
  4. Boil the noodles (fresh Chinese wheat noodles if you can get them, or spaghetti as a good stand-in) until just tender, then drain well and add to the seasoned bowl, tossing to coat.
  5. Top with the pickled mustard greens, crushed peanuts and scallion, and serve immediately.
