Cifantuan (Rice Roll with Fried Dough and Pork Floss)
One serving has 524 kcal and 10 g protein, and at least a fifth of a woman's daily need of manganese (61%), selenium (40%), vitamin K (40%), thiamin (35%), niacin (24%) and phosphorus (22%). Ready in 55 minutes.

- Preparation: 30 min
- Cooking: 25 min
- Makes: 1 serving (152 g)
- Difficulty: Medium
- Diets: Dairy-free
- Contains: gluten, mustard, pork
Ingredients
- 90 g Rice, glutinous
- 15 g Flour, all-purpose
- 0.5 g Baking powder
- 10 g Vegetable oil
- 15 g Ham, cooked
- 15 g Mustard greens, pickled
- 5 g Sugar
- 1 g Salt
Method
- Soak the glutinous rice for at least 1 hour, then steam for about 25 minutes until tender and sticky.
- Meanwhile, mix the flour with the baking powder, a pinch of the salt and just enough water to form a soft dough; shape into a small stick and shallow-fry in the oil, turning, for 3-4 minutes until golden and puffed. This stands in for the crisp fried dough stick (youtiao) traditionally used.
- Finely shred the cooked ham; it stands in here for the light, fluffy pork floss traditionally used.
- Lay a sheet of plastic wrap or a damp cloth flat, spread the hot sticky rice out into a rectangle, and sprinkle with the sugar and remaining salt.
- Lay the fried dough stick, shredded ham and pickled mustard greens along the centre, then use the cloth to help roll the rice tightly around the filling into a log.
- Wrap tightly, let it firm up for a few minutes, then slice in half to serve.
