- Cooking: 30 min
- Makes: 1 serving (389 g)
- Difficulty: Medium
- Diets: Dairy-free, High protein

Ingredients
- 90 g Rice, white, long-grain
- 90 g Chicken thighs, boneless, skinless, raw
- 25 g Salami
- 5 g Mushrooms, shiitake, dried
- 10 g Soy sauce
- 5 g Oyster sauce
- 3 g Sugar
- 3 g Sesame oil
- 3 g Ginger, fresh

Method
- Marinate the chicken thigh pieces with half the soy sauce, the ginger and a little of the sesame oil for at least 15 minutes.
- Soak the dried shiitake mushroom in hot water until soft, then drain and slice, and slice the Chinese sausage.
- Rinse the rice and put it in a claypot or heavy pot with the water; bring to a boil, then reduce to a low simmer.
- Once the water has mostly been absorbed and small holes appear on the surface, arrange the marinated chicken, sausage and mushroom on top, cover, and cook over low heat for 15-18 minutes until the rice is tender and a crust forms on the bottom.
- Mix the remaining soy sauce, oyster sauce and sugar and drizzle over the rice; scatter with scallion, and serve straight from the pot.
